Double Chocolate Loaf
I spent a week in Florida this summer. It was fantastic. I lived like a retired Floridian. Yoga in the morning, home cooked meals, beach time, lots of reading, lots of sleep. So good! We splurged on all the healthy ingredients I would usually have in my kitchen at home. We spent a good amount of money at whole foods and it kept us for the week and then some. At the end of the week, I was left with a whole bunch of ingredients that I needed to use up so that they wouldn’t go to waste. I decided I could use the ingredients to create my new favourite snack: the double chocolate loaf!
Here is how I put it all together:
Dry Ingredients
- 1 cup almond flour
- 1 cup raw protein (chocolate)
- 1 cup rolled oats
- 1/2 tsp baking powder
- 1/4 cup chia seeds
- 1 tbsp hemp seeds
- 1/2 cup cacao powder
- Wet Ingredients
- 2 tbsp melted coconut oil
- 4 eggs
- 1/3 cup almond milk
- 1 tsp vanilla extract
- 1/2 cup maple syrup
Mix the dry, mix the wet, pour dry into wet slowly, bake at 350 for about 30 minutes in a loaf dish lined with butter or coconut oil. Once it’s done, take it out of the loaf dish and let it cool on a rack for about 10 minutes before you dig in.
